Some mornings call for very little cooking. Just a bowl, something cultured, and whatever fruit is looking lovely.

A serving idea for your kefir.

This is an assembly recipe made with prepared, ready-to-eat kefir. Use a suitable purchased kefir or a batch made and stored according to a reliable method. It is also a nice way to try kefir before deciding to make it yourself.

The method

  1. Make a little room.

Divide the ready-to-eat kefir between two bowls.

  2. Add the fruit.

Peel and slice the mango. Halve the passionfruit and spoon out the pulp. Arrange the fruit over the kefir.

  3. Finish, and enjoy.

Scatter over the toasted coconut. Serve straight away, with a spoon and a quiet five minutes.

Let the fruit lead.

Choose a ripe mango you enjoy. The sweet fruit, tangy kefir, bright passionfruit, and little crunch of coconut do most of the work.

Use the handling instructions for your prepared kefir and serve the assembled bowls promptly.
